PERSIAN CHICKEN

Ingredients:

  1. Chicken – ½ kg
  2. Cinnamon powder – ½ tb
  3. Nutmeg powder – ¼ tb
  4. Cardamom powder – ½ tb
  5. Black pepper powder – ½ tb
  6. Turmeric powder – ½ tb
  7. Saffron drops – 2 drops
  8. Lime juice – 1 tb
  9. Rose water – 1 tb
  10. Bay leaf – 1 no.
  11. Onion – 1 no.
  12. Lime zest – ½ tb
  13. Salt

Procedure:

Marinate chicken (1/2 kg) with cinnamon powder (1/2 tb), nutmeg powder (1/4 tb), cardamom powder (1/2 tb), black pepper powder (1/2 tb) and turmeric powder (1/2 tb).

Make a liquid mixture of saffron drops (2 drops), lime juice (1 tb), rose water (1 tb) and warm water (1/2 cup). Let the liquid sit for 1/2 hour.

Heat a pan. Add oil and add bay leaf (1 no.), onion (1 no.) and fry for 2 minutes. Add the marinated chicken and cook for 5 minutes.

Add the lime zest (1/2 tb) and the water mixture. Cover and cook for 5 minutes.

Serve hot with rice or chapatti.
