JAMAICAN CHICKEN CURRY

Jamaican chicken curry

Ingredients:

  1. Chicken – ½ kg
  2. Turmeric powder – ½ tb
  3. Coriander seeds = ½ tb
  4. Dry red chilli – 2 no.
  5. Fenugreek seeds – 4 no.
  6. Cumin seeds – ½ tb
  7. Cinnamon – ½”
  8. Green cardamom – 2 no.
  9. Black peppercorn – 1 tb
  10. Star Anise – 1 no.
  11. Yellow mustard seeds – ½ tb
  12. Ginger powder – ½ tb
  13. Nutmeg
  14. Oinion – 1/2 no.
  15. Garlis paste – 1 tb
  16. Tomato – 1 no.
  17. Coconut milk – 1 cup
  18. Lime juice – ½ tb
  19. Salt

Procedure:

Make curry powder – Dry roast the following ingredients and make powder. Turmeric powder (1/2 tb), Coriander seeds (1/2 tb), Dry red chilli (2 no.), Fenugreek seeds (4 no.), cumin seeds (1/2 tb), cinnamon (1/2”), green cardamom (2 no.), Black peppercorn (1 tb), Star anise (1 no.), yellow mustard seeds (1/2 tb), ginger powder (1/2 tb), nutmeg (pinch),

Marinate chicken (1/2 kg) with onion paste (1/2), oil (1 tb).

Heat oil in a kadai. Add the marinated chicken and fry for 5 minutes. Next add garlic paste (1 tb) and tomato paste (1 no.). Fry for next 10 minutes.

Add coconut milk (1 cup) and lime juice (1/2 tb).

Serve hot with rice.
