Panch phoron Chicken Curry

Ingredients:

  1. Chicken – ½ kg
  2. Salt
  3. Ginger paste – ½ tb
  4. Garlic paste – ½ tb
  5. Black pepper powder – ½ tb
  6. Mustard oil
  7. Panch phoron – 1 ½ tb
  8. Turmeric powder – ½ tb
  9. Cumin powder – ½ tb
  10. Ginger strips – 1”
  11. Green chilli strips 2 no.
  12. Chopped onion – 2 tb
  13. Chopped tomato – 2 tb
  14. Dry red chilli – 2 no.

Procedure:

  1. Marinate chicken (1/2 kg) with salt and ginger paste (1/2 tb), garlic paste (1/2 tb), black pepper powder (1/2 tb).
  2. Heat oil in a kadai.
  3. Add panch phoron (1/2 tb).
  4. Add chicken (1/2 kg) and fry for 5 minutes.
  5. Next add turmeric powder (1/2 tb), salt and cumin powder (1/2 tb).
  6. Add ginger strips (1”) and green chilli strips (2).
  7. Cover and cook for 10 minutes.
  8. Add chopped onion (2 tb) and chopped tomato (2 tb).
  9. Next add water (2 cups) and cook till the chicken is tender.
  10. For tadka in a small pan add mustard oil (1 tb) with panch phoron (1 tb) and dry red chilli (2).
  11. Add the tadka on the chicken.
  12. Serve hot with rice.
